Cinnamon apple muffins

Click here for the Italian version

Hello! Today it's really cold in Rome, I'm freezing!!
In days like these I love to stay at home cooking something sweet for a very special tea break or better... hot chocolate break!
I've decided to make one of my favorite recipes... cinnamon apple muffins! I really love the taste of cinnamon and apple together.
This recipe is super fast and super yummy!

Ingredients:
110 g unsalted butter, melted (1/2 cup )
225 g granulated sugar (1 cup)
2 eggs
125 ml milk (9 tablespoon)
1 teaspoon of vanilla extract
275 g of flour (1 and 1/5 cups)
12 g yeast (1/10 cup)
2 apples
30 g of light brown sugar (2 tablespoons)

Preheat the oven to 180 °C and grease a standard muffin pan.
Mix together the eggs in a large bowl, add sugar and mix until combined.
Stir in vanilla extract, milk and the melted butter. Add flour in three partitions and mix. Stir in the apples cut up into small pieces (remember to leave 1/2 apple for the garnish) and mix until combined.
Scoop the mixture into each cup of prepared pan and garnish with tiny cut apples and light brown sugar.
Bake for 20 min until the muffins' top gets brown. Enjoy.
